Ingredients
Ingredients
- 2 medium ripe but still slightly firm peaches, diced
- 1 ripe but still slightly firm large avocado, diced
- 1 large ear corn, kernels cut off (about ¾ cup corn)
- 3 tablespoons finely diced red onion
- 1 jalapeño, seeded and diced
- 2 tablespoons finely diced cilantro
- 1 lime, juiced
- Salt & freshly ground black pepper, to taste
Instructions
- Combine Ingredients: Place the diced peaches, avocado, corn kernels, finely diced red onion, diced jalapeño, and chopped cilantro in a medium bowl.
- Add Lime Juice and Season: Pour the freshly squeezed lime juice over the mixture and season with salt and freshly ground black pepper to taste.
- Mix Well: Gently stir the ingredients together until well combined, being careful not to mash the avocado.
- Garnish and Serve: Garnish with extra cilantro if desired. Serve immediately with multigrain tortilla chips or as a refreshing topping for salmon, fish tacos, grilled chicken, or shrimp.
Notes
- Store any leftover peach salsa in an airtight container in the refrigerator for up to 3 days.
- The lime juice helps preserve the avocado’s green color and freshness.
- For best texture, use ripe but still slightly firm peaches and avocado to avoid mushiness.
- Double the recipe to serve larger groups of 8-10 people.
