  • 1 ripe but still slightly firm large avocado, diced
  • 1 large ear corn, kernels cut off (about ¾ cup corn)
  • 3 tablespoons finely diced red onion
  • 1 jalapeño, seeded and diced
  • 2 tablespoons finely diced cilantro
  • 1 lime, juiced
  • Salt & freshly ground black pepper, to taste


Instructions

  1. Combine Ingredients: Place the diced peaches, avocado, corn kernels, finely diced red onion, diced jalapeño, and chopped cilantro in a medium bowl.
  2. Add Lime Juice and Season: Pour the freshly squeezed lime juice over the mixture and season with salt and freshly ground black pepper to taste.
  3. Mix Well: Gently stir the ingredients together until well combined, being careful not to mash the avocado.
  4. Garnish and Serve: Garnish with extra cilantro if desired. Serve immediately with multigrain tortilla chips or as a refreshing topping for salmon, fish tacos, grilled chicken, or shrimp.
