Description

This Authentic Italian Bruschetta recipe brings you a classic appetizer featuring ripe vine-ripened tomatoes, fresh basil, and fragrant garlic on grilled Italian baguette slices. Simple yet bursting with fresh Mediterranean flavors, this dish is perfect as a starter or a light snack, ready in just 15 minutes with minimal ingredients.

Ingredients

Tomato Topping

  • 2 vine ripened tomatoes, diced
  • 1/4 cup chopped fresh basil
  • 1/2 tsp dried oregano
  • Pinch of salt
  • 1 to tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar

Bread & Garnish

  • 1 Italian style baguette, sliced into 1/4 to 1/2 inch slices
  • 1 whole garlic clove
  • 1½ tablespoons extra virgin olive oil (for brushing bread)

Instructions

  1. Prepare the Tomato Mixture: In a medium bowl, combine the diced tomatoes, chopped fresh basil, dried oregano, a pinch of salt, 1 to 1½ tablespoons of extra virgin olive oil, and the balsamic vinegar. Stir gently to mix all ingredients without mashing the tomatoes.
  2. Chill the Mixture: Cover the bowl and refrigerate the tomato mixture for at least 30 minutes. This allows the flavors to meld and intensify.
  3. Prepare the Bread: Slice the Italian baguette into 1/4 to 1/2-inch thick pieces. Cut off one end of the garlic clove and rub the cut side onto both sides of each bread slice to infuse it with a gentle garlic flavor.
  4. Oil the Bread: Lightly drizzle or brush the remaining olive oil onto both sides of each garlic-rubbed bread slice to help it toast evenly and develop a golden crust.
  5. Toast the Bread: Heat a grill, grill pan, or skillet over medium-high heat. Toast the bread slices on both sides until golden brown, about 2 to 4 minutes per side. This adds a smoky char and crunchiness to the bread.
  6. Assemble and Serve: Spoon the chilled tomato mixture generously over the hot toasted bread slices. Serve immediately to enjoy the contrast between the warm bread and cool topping.

Notes

  • For extra flavor, you can drizzle a little more balsamic vinegar over the bruschetta before serving.
  • Use fresh, ripe tomatoes for the best taste and texture.
  • If you prefer, you can use a toaster oven or regular oven to toast the bread slices instead of a skillet or grill pan.
  • This recipe can be doubled easily for larger gatherings.
  • To make it vegan, ensure the bread does not contain dairy or eggs.
