- 1 box favorite Sugar Cookie mix
- 2 teaspoons Lemon Zest
Frosting
- 1 8-ounce package of Cream Cheese, softened
- 1 10-ounce container Whipped Topping
- ½ teaspoon Vanilla Extract
- ¼ cup Confectioner’s Sugar
Toppings
- Blueberries (48), rinsed and completely dry
- Strawberries, sliced 1/8 inch thick, tops removed
Instructions
- Preheat and prepare pan: Preheat the oven to 350°F. Line a 10×15 inch baking sheet or jelly roll pan with parchment paper, allowing the paper to overhang the long sides for easy lifting later.
- Prepare and bake cookie crust: Prepare the sugar cookie mix according to package instructions and stir in the lemon zest. Spread the dough evenly into the prepared pan, pressing it down fully with a spoon and fingers. Bake for 8-11 minutes until lightly golden but not overbaked. Cool completely on a rack.
- Slice strawberries: While the crust cools, slice strawberries vertically into 1/8 inch thick pieces, removing any green tops. Refrigerate covered.
- Make cream cheese frosting: Beat softened cream cheese on high speed until smooth. Add whipped topping, vanilla extract, and confectioner’s sugar and beat at medium speed until incorporated, then on high until creamy and smooth, despite some initial lumps.
- Spread frosting on cookie: Using the parchment paper overhang, lift the fully cooled cookie crust from the pan if needed. Spread the cream cheese frosting evenly over the entire surface.
- Add blueberries: Place 48 blueberries in the top left corner in 6 rows of 8, closely spaced but allowing white frosting to show through, mimicking the stars on the flag.
- Arrange strawberry stripes: Dab strawberries dry with a paper towel. Arrange sliced strawberries in horizontal rows to the right of the blueberries, with ends touching and all slices facing the same direction. Leave about an inch of white frosting visible between each row to create the red stripes.
- Chill and serve: Cover the assembled flag pizza with plastic wrap and refrigerate until ready to serve. Cut into 25 serving pieces using a sharp kitchen knife or pizza cutter.
