Ingredients

For the Egg Rolls

  • 1 lb ground beef
  • 1 whole medium white onion, finely diced
  • 1 whole green bell pepper, finely diced (optional)
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • 1 tbsp Worcestershire sauce
  • 1 cup shredded provolone cheese
  • 1 package egg roll wrappers
  • 1 whole egg, beaten (for sealing)
  • 1 tsp olive oil spray

For the Roasted Garlic Aioli

  • 1 whole garlic bulb
  • 1 tablespoon olive oil
  • 1 1/4 cup mayonnaise
  • 1 tablespoon freshly squeezed lemon juice
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper


Instructions

  1. Cook the ground beef: Heat a heavy bottomed pan, like cast iron, over medium-high heat. Add the ground beef and let it brown undisturbed for 3-4 minutes.
  2. Break up the beef: Use a meat masher to break the beef into smaller pieces while the garlic is roasting.
  3. Add vegetables: Add finely diced onion and green bell pepper to the pan. Cook for another 4-5 minutes, stirring occasionally, until vegetables soften and beef is cooked through.
  4. Add seasoning and cheese: Stir in salt, black pepper, garlic powder, and Worcestershire sauce. Reduce heat to low and mix in shredded provolone cheese. Let cheese melt, then remove from heat and cool slightly.
  5. Preheat air fryer: Set air fryer to 375°F while preparing the egg rolls.
  6. Assemble egg rolls: Place 1-2 tablespoons of the cheesesteak mixture about ¾ down the center of an egg roll wrapper. Fold up the bottom corner, dab edges with beaten egg, fold in sides like an envelope, then roll tightly toward the top corner. Seal edge with a small dab of water. Repeat for remaining wrappers and filling.
  7. Air fry egg rolls: Lightly spray olive oil on both sides of each egg roll. Place seam side down in air fryer basket and cook 6-7 minutes. Flip and cook an additional 4-5 minutes until golden brown. Keep cooked egg rolls warm in 200°F oven if working in batches.
  8. Roast garlic: Preheat oven to 400°F. Cut ½ inch from the top of garlic bulb to expose cloves. Drizzle olive oil on top, wrap bulb in foil, and bake 25-35 minutes until cloves are tender and caramelized.
  9. Prepare aioli base: In a small bowl, combine mayonnaise, lemon juice, salt, and pepper. Set aside.
  10. Make garlic aioli: Let roasted garlic cool slightly, then invert bulb and squeeze cloves out. Mash garlic cloves into the mayo mixture with a fork until fully incorporated. Adjust salt to taste.
  11. Serve: Arrange the cheesesteak egg rolls on a serving platter with the roasted garlic aioli for dipping. Enjoy immediately.
