Ingredients

Base

  • 115g / 1/2 cup / 1 US stick melted salted butter (or unsalted butter + 1/4 tsp salt)
  • 1 cup crushed Arnott’s Marie crackers (11 crackers) or graham cracker crumbs (8 crackers)
  • 1 cup icing sugar / powdered sugar
  • 3/4 cup smooth peanut butter

Topping

  • 1 cup dark chocolate chips (melting kind, US: semi sweet)
  • 2 tbsp smooth peanut butter


Instructions

  1. Prepare Pan: Butter and line an 8-inch (20cm) square dish or pan with baking paper to prevent sticking and allow easy removal of the bars.
  2. Make Base: In a bowl, combine the melted butter, crushed crackers, powdered sugar, and 3/4 cup peanut butter. Mix thoroughly until all ingredients are evenly combined. Press this mixture firmly into the prepared pan to form an even base layer.
  3. Prepare Topping: Melt the chocolate chips and 2 tablespoons of peanut butter together. This is best done in the microwave with two 30-second bursts, stirring in between until smooth. Pour the melted mixture over the base and spread evenly. You may smooth the top or create swirls for visual appeal.
  4. Set Bars: Place the pan in the refrigerator and chill for about 1.5 hours until the topping is firm. Once set, remove from the fridge and allow the bars to warm slightly at room temperature for easier cutting and cleaner edges. Cut into 16 squares or any preferred shape and serve.
