Instructions
- Whip the Cream: Using a whisk, whip the cold heavy cream until it just begins to form lines and thickens, stopping before soft peaks form. This creates a creamy texture without too much air.
- Combine Ingredients: Gently fold the Greek yogurt and honey into the whipped cream. Then, fold in your choice of fruit or mix-ins carefully to maintain the creaminess.
- Prepare Molds: Ensure your popsicle molds are completely dry by using a thin cloth and a chopstick to dry inside each mold to prevent ice crystals from forming on your popsicles.
- Fill Molds: Pour the mixture into the dry molds, using a chopstick or extra popsicle stick to press down and eliminate any air pockets. Tap the molds gently on the counter to bring any bubbles to the surface.
