Ingredients
The Fajita Seasoning
- 2 tbsp paprika
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tbsp chili powder
- 1 tsp garlic powder
- 1/2 tbsp ground coriander
- 1/2 tbsp sugar
- Salt and pepper to taste
The Fajitas
- 3 bell peppers, seeded and thinly sliced
- 1 onion, thinly sliced
- 1/4 cup olive or avocado oil, divided
- 1 1/2 lbs sirloin or flank steak, cut into thin 1/2-inch strips
- Juice of 1/2 lime
For Serving
- Warm tortillas
- Sour cream
- Guacamole or sliced avocado
- Salsa
- Fresh cilantro
- Lime wedges
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 400°F. Line a large rimmed baking sheet with foil to prevent sticking and ensure easy cleanup.
- Season Vegetables: Arrange the thinly sliced bell peppers and onion on the baking sheet. Drizzle with 2 tablespoons of olive or avocado oil. Sprinkle with 1 tablespoon of the fajita seasoning and toss well to coat the vegetables evenly.
- Arrange Veggies and Steak: Move the seasoned peppers and onions to the outer edges of the baking sheet, creating space in the center. Place the steak strips in the center of the pan.
- Season Steak: Toss the steak strips with the remaining 2 tablespoons of oil and sprinkle with the remaining 2 tablespoons of fajita seasoning. Spread the steak and vegetables into a mostly single layer to promote even cooking.
- Add Lime Juice: Squeeze the juice of half a lime over the steak to add brightness and tenderize the meat.
- Bake: Place the baking sheet in the preheated oven and bake at 400°F for 10 minutes. Halfway through, stir the steak strips gently, especially to separate any pieces that overlap, ensuring even cooking.
- Broil for Char: Switch the oven to the broil setting on high. Broil the fajitas for 5-10 minutes, checking frequently. This step adds a perfect char and caramelization to the steak and makes the vegetables tender without losing their texture.
- Serve: Remove from oven and serve hot with warm tortillas, sour cream, guacamole or sliced avocado, salsa, fresh cilantro, and lime wedges for squeezing.
Notes
- Slice all ingredients thinly and evenly to ensure the rapid 15-minute cook time works effectively; thicker cuts will require more time.
- Position vegetables around the edge and steak in the center so each cooks properly without steaming one another.
- Do not skip the broiling step—it develops the essential charred edges that replicate skillet-cooked fajitas.
- Line your pan with foil to make cleanup quick and to prevent seasoning from burning onto the sheet pan during broiling.
