Ingredients
Wonton Cups
- 24 wonton wrappers
Meat Filling
- ½ pound lean ground beef
- 3 tablespoons water
- 1½ tablespoons mild taco seasoning
Toppings
- 1 cup shredded fiesta blend cheese
- 1 cup shredded lettuce
- ½ cup guacamole
- ½ cup sour cream
- ½ cup pico de gallo
Instructions
- Prepare muffin tin: Preheat the oven to 375°F. Lightly spray a regular-size muffin tin with non-stick cooking spray to prevent sticking.
- Form wonton cups: Press one wonton wrapper into each muffin cup, then overlay a second wrapper on top and press down, making sure to press the wrappers firmly against both the bottom and sides of each cup. Repeat for all muffin cups.
- Bake wonton cups: Bake the wonton wrappers for 8 to 10 minutes, or until they turn golden brown. Note that the tips may get a deeper golden color than the bottom.
- Cook ground beef: While the wontons bake, place the ground beef in a 1½ to 2-quart saucepan or small nonstick skillet over medium-high heat. Stir continuously, breaking the beef into small pieces, until fully cooked and no longer pink.
- Season beef: Reduce heat to low, add taco seasoning and water, stir well to combine, and simmer for a few minutes. Remove from heat.
- Assemble taco bites – meat layer: Spoon about 1 tablespoon of the seasoned taco meat into each baked wonton cup.
- Add cheese: Sprinkle 1 tablespoon of shredded fiesta blend cheese evenly over the meat in each cup.
- Add lettuce: Top the cheese with ½ to 1 tablespoon of shredded lettuce.
- Add guacamole: Spoon 1 to 1½ teaspoons of guacamole onto the lettuce layer.
- Add sour cream: Add a 1 teaspoon dollop of sour cream in the center of the guacamole.
- Add pico de gallo and serve: Spoon 1 to 2 teaspoons of pico de gallo on top of the sour cream. Serve the taco bites immediately for best texture and flavor.
Notes
- For crispier wonton cups, you can bake them a few minutes longer but watch closely to avoid burning.
- Mild taco seasoning works well for families; feel free to use medium or hot depending on your spice preference.
- Use lean ground beef to reduce excess fat and grease in the filling.
- These taco bites are best served fresh but can be prepped ahead by baking the wonton cups and cooking the meat; then assemble just before serving.
- To make this vegetarian, substitute the beef with seasoned cooked lentils or crumbled tofu.
