  • 1/2 cup (115 grams) unsalted butter (softened to room temperature)
  • 1/2 cup (100 grams) brown sugar (lightly packed)
  • 1/4 cup (50 grams) granulated sugar
  • 1 large egg yolk (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1/3 cup (80 grams) pumpkin puree (squeeze out excess moisture with paper towels*)

Instructions

  2. Cream Butter and Sugars: Using a stand mixer fitted with the paddle attachment or an electric hand mixer in a large bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar for 1-2 minutes until the mixture is smooth and well combined.
  3. Add Egg Yolk, Vanilla, and Pumpkin: Add the large egg yolk and pure vanilla extract to the creamed mixture. Mix thoroughly until fully incorporated. Then, blend in the pumpkin puree, ensuring the mixture is uniform.
