  • 1 package taco seasoning or ¼ cup taco seasoning
  • 1.5 lbs chicken breast
  • ⅓ cup fresh cilantro, chopped
  • Juice from 1 lime
  • 10 tortillas
  • 1 ¼ cup cheese like cotija, cheddar, Mexican, Monterey jack

Instructions

  1. Prepare the Slow Cooker Base: Mix together the salsa and taco seasoning in the slow cooker. This will create a flavorful cooking liquid that infuses the chicken with great taste.
  2. Add Chicken and Cook: Place the chicken breasts into the slow cooker with the salsa mixture. Cook on high for 3 hours or on low for 6 hours, allowing the chicken to become tender and flavorful.
  3. Shred the Chicken: Remove the cooked chicken from the slow cooker and shred it using two forks. Return the shredded chicken back to the slow cooker to soak up even more flavor.
  4. Add Fresh Ingredients: Mix in the chopped fresh cilantro and lime juice into the shredded chicken, stirring well to combine and brighten the flavors.
