Shrimp and Marinade

Instructions
- Prepare the Shrimp: If using frozen shrimp, thaw completely and peel and devein if needed. Cut shrimp into small bite-sized pieces to allow the citrus juice to ‘cook’ them evenly.
- Marinate the Shrimp: In a non-reactive bowl, combine the shrimp pieces with freshly squeezed lemon and lime juice along with kosher salt. Stir well to coat all shrimp. Cover and refrigerate for 2 to 3 minutes until the shrimp turn opaque, indicating they are ‘cooked’ by the citrus juices.
- Prepare the Vegetables: While the shrimp marinates, chop the tomatoes (removing seeds), finely dice the red onion, and finely chop the seeded jalapeño. Roughly chop the cilantro leaves and tender stems, reserving half for garnish if desired.
