- Prepare the egg yolk mixture: In a small saucepan, whisk together the egg yolks, Greek yogurt, light brown sugar, flour, and a pinch of sea salt. Place the saucepan over low heat and cook while stirring constantly for about 5 minutes, or until the mixture thickens slightly. This step gently cooks the yolk mixture ensuring safety and sets the base for the mousse.
- Add the chocolate: Remove the saucepan from heat and allow the mixture to cool for approximately 2 minutes. Then add the dark chocolate chips and stir until they completely melt and incorporate smoothly into the mixture. Set this chocolate mixture aside to cool further while you prepare the egg whites.
- Whip the egg whites: Using a stand mixer, whip the egg whites until stiff peaks form. This creates the airy texture essential to a mousse.
- Fold in chocolate mixture: Slowly drizzle the cooled chocolate mixture into the whipped egg whites. Gently fold the two mixtures together with a spatula, taking care not to deflate the egg whites. Continue folding until the mixture is uniform and smooth.
