Description

These Pistachio and Cranberry Energy Bites are a deliciously nutritious snack combining the natural sweetness of Medjool dates, the crunch of pistachios, and the tartness of dried cranberries. Perfect for a quick energy boost, these no-bake, paleo and vegan bites come together in just 15 minutes and require minimal ingredients and effort.


Ingredients

Dry Ingredients

  • 2 cups shelled pistachios, divided
  • 12 large Medjool dates (about 6 1/2 oz / 200 g)
  • 1/2 cup dried unsweetened cranberries

  • About 2 teaspoons hot water


Instructions

  1. Chop pistachios: In your food processor, process 1 cup of pistachios until finely chopped but not powdered. Remove from the bowl and set aside for coating later.
  2. Combine main ingredients: Process the remaining 1 cup of pistachios until finely chopped, then add the Medjool dates and dried cranberries. Continue processing until the mixture is well combined and sticky.
  3. Add water to bind: Add about 2 teaspoons of hot water to the mixture and process again until the mixture comes together and forms a ball.
  4. Form energy bites: With damp hands, scoop approximately 2 level teaspoons of the mixture and roll into balls. This should yield about 18-20 bite-sized balls.
  5. Coat and chill: Roll each ball in the reserved chopped pistachios to coat them. Press slightly to ensure the nuts stick to the surface. Place the balls on a parchment-lined baking sheet and refrigerate for one hour to set before serving.

Notes

  • Use Medjool dates as they offer natural sweetness and a soft texture, which helps bind the mixture.
  • If the mixture feels too dry, add a little more hot water, a teaspoon at a time, until it comes together easily.
  • Store energy bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.
  • You can substitute dried cranberries with other dried fruits like cherries or blueberries if preferred.
  • For a nut-free version, consider replacing pistachios with seeds like pumpkin or sunflower seeds.
