Description

A delightful Peach and Vegan Brie Grilled Cheese Sandwich combining the sweet juiciness of ripe peaches with creamy vegan cheese, kissed with fresh dill and sea salt. Perfectly grilled on sourdough bread with a crispy olive oil-brushed crust, this sandwich offers a fresh, savory-sweet flavor profile ideal for a quick lunch or light dinner.

Ingredients

Sandwich Ingredients

  • 6 slices sourdough bread
  • 2 large ripe peaches
  • 6 ounces vegan cheese, such as Treeline’s French-style vegan cream cheese
  • 3 tbsp fresh dill
  • 1/4 tsp sea salt
  • 2 tbsp olive oil

Instructions

  1. Prepare Peaches and Cheese: Slice the peaches very thinly to ensure a tender bite and slice the vegan cheese if it is a firmer variety, allowing for even melting.
  2. Preheat Grill or Panini Maker: Brush one side of each sourdough bread slice with olive oil to create a crispy exterior. Heat your grill or panini maker to a medium temperature.
  3. Assemble Sandwich Sides: On the un-oiled side of three slices of bread, layer the thin peach slices evenly. On the un-oiled side of the remaining three slices, evenly distribute the vegan cheese.
  4. Add Seasonings: Sprinkle fresh dill and sea salt over both the peach and cheese sides to enhance flavor.
  5. Form Sandwiches: Press each peach-topped slice firmly onto a cheese-topped slice, creating three sandwiches.
  6. Grill the Sandwiches: Place one sandwich at a time onto the preheated grill or panini maker. Cook for 2 to 3 minutes until the bread is golden and crisp. If using a grill, flip the sandwich and cook for an additional 30 seconds to ensure even heating.
  7. Serve: Remove the sandwich from heat and repeat the cooking process with the remaining sandwiches. Serve warm alongside a fresh side salad.

Notes

  • Use ripe peaches for the best natural sweetness and juiciness.
  • If you don’t have a panini maker or grill, a skillet on medium heat will work — press the sandwich down with a spatula and cook each side until golden.
  • Fresh dill can be substituted with other herbs like basil or thyme for a different flavor twist.
  • Adjust olive oil quantity based on desired crispiness and calorie preference.
  • This sandwich is best enjoyed immediately while warm to appreciate the contrast of melty cheese and juicy peaches.
