Ingredients

Potatoes

  • 8 russet potatoes
  • 2 cups ice

Seasonings & Spice Mix

  • 1½ tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp kosher salt

Oils & Cheese

  • ½ cup olive oil
  • ¼ cup shredded parmesan cheese
  • ¼ cup grated parmesan cheese

  • 2 tbsp parsley, chopped

Instructions

  1. Prepare the Potatoes: Wash and cut the russet potatoes into thin round slices, placing them into a large bowl to prepare for soaking.
  2. Soak with Ice Water: Fill the bowl with enough water to cover the potatoes and add 2 cups of ice. Let the potatoes soak for about 30 minutes. This step helps remove excess starch, resulting in crispier potatoes.
  3. Dry the Potatoes: After soaking, remove the potato slices from the water and pat them thoroughly dry with paper towels to ensure they roast properly without steaming.
  4. Preheat Oven: Preheat your oven to 450°F (232°C) for optimal roasting temperature.
  5. Season the Potatoes: Place the dried potato slices into a large zip-top bag and add garlic powder, smoked paprika, kosher salt, and black pepper. Seal the bag and shake well to evenly coat the potatoes with the spices.
  6. Add Olive Oil: Pour in the olive oil, reseal the bag, and shake again to coat the potato slices evenly with the oil and seasonings.
  7. Arrange for Baking: Remove the potatoes from the bag and spread them out in a single layer on parchment-lined baking sheets. Use more than one baking sheet if necessary to avoid overcrowding.
