Ingredients

Fluffy Pancake Ingredients

  • Fluffy Pancake mix or your favorite pancake mix (enough for 24 mini pancakes)

Fruit

  • 1 pint raspberries or strawberries
  • 1 pint blueberries or blackberries
  • 2 bananas, sliced

Other Components

  • 12 oz berry-flavored yogurt
  • 1 cup granola
  • Syrup, to taste
  • Twisted orange slices, for garnish and texture


Instructions

  1. Prepare the Pancakes: Follow the instructions on your fluffy pancake mix package or use your favorite pancake recipe. Heat a skillet over medium-high heat. Use a medium cookie scoop (#24) to portion mini pancakes. Cook the pancakes until golden brown and bubbles form on the top surface, then flip and cook the other side until golden and cooked through.
  2. Prepare the Fruit: Wash all the fruit (berries and bananas) thoroughly and pat dry with paper towels. Slice the bananas and keep the berries whole.
  3. Prepare the Bowls: Fill small bowls with berry-flavored yogurt, granola, and syrup.
  4. Assemble the Charcuterie Board: Start by placing the largest items, the mini pancakes, onto a large cutting board in small piles or a train-like arrangement. Arrange the smaller fruit groups around the pancakes, filling the spaces attractively. Nestle the yogurt, granola, and syrup bowls on the board, tucking additional fruit around them to fill empty spaces.
  5. Add Garnish and Texture: Scatter twisted orange slices throughout the board to add bright color, texture, and a burst of citrus flavor to complement the sweet pancakes and berries.
