Ingredients

Crust

  • 25 Oreo cookies

Ganache

  • 8 oz semi-sweet or dark chocolate, finely chopped
  • 1 teaspoon instant coffee
  • 16 oz cream cheese, softened
  • ¼ cup sour cream
  • ½ cup powdered sugar

Whipped Cream

  • 2 ½ cups heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Prepare Crust: Place Oreo cookies in a food processor and pulse until they become fine crumbs. Transfer the crumbs to a medium mixing bowl, add melted butter, and toss until the crumbs are evenly moistened. Press the crumb mixture firmly into the bottom and up the sides of a 9.5-inch (24cm) pie plate. Set aside.
  2. Make Ganache: Put 6 oz of chopped chocolate into a medium heatproof bowl. In a small saucepan, heat ⅔ cup heavy cream over low heat until steaming but not boiling. Pour the hot cream over the chocolate, cover with foil, and let sit undisturbed for 5 minutes. Remove foil and whisk until the mixture is smooth. Pour ganache evenly over the Oreo crust and refrigerate while preparing the filling.
  3. Prepare Chocolate Mud Filling: In a microwave-safe bowl, combine 8 oz chopped chocolate and 1 teaspoon instant coffee. Heat in 15-20 second intervals, stirring well between each interval until completely smooth and melted. Let cool to melted but not warm. In a large bowl, mix softened cream cheese, sour cream, and ½ cup powdered sugar until smooth. Stir the cooled melted chocolate into the cream cheese mixture until fully combined. Set aside.
  4. Make Whipped Cream: In a separate large bowl, combine 2 ½ cups heavy cream, 1 cup powdered sugar, and 1 teaspoon vanilla extract. Using an electric mixer, beat until stiff peaks form, and mixture is thick and fluffy.
