- 1-2 tsp dried oregano
Toppings
- 1/2 cup Greek tzatziki sauce
- 1 large tomato, diced
- 1/2 cup chopped pitted Greek olives
- 1/2 cup crumbled feta cheese
- 1/2 cup chopped fresh parsley
Instructions
- Get Ready: Preheat your oven to 375°F (190°C) to prepare for baking the potatoes.
- Prepare the Potatoes: Poke holes over each russet potato using a fork to allow steam to escape. Rub each potato with extra virgin olive oil and sprinkle generously with kosher salt. Place the potatoes on a baking sheet and bake for about 1 hour or until the potatoes are very soft inside and the skins are crisp. Depending on size, baking can take up to 75 minutes.
