Description

Loaded BBQ Chicken Flatbread Pizza is a delicious and easy-to-make dish perfect for a fun weeknight dinner or party appetizer. It features tender, seasoned chicken breast, tangy BBQ sauce, gooey mozzarella cheese, and fresh veggies all baked on crispy flatbreads for a satisfying meal everyone will love.

Ingredients

Chicken

  • 1 lb chicken breast, cut into very small bite-sized pieces
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Flatbreads & Toppings

  • 2 flatbreads (Stonefire flatbreads recommended)
  • ⅓ cup BBQ sauce, plus more for drizzling
  • 2 cups shredded mozzarella cheese
  • 1 red bell pepper, thinly sliced
  • small red onion, thinly sliced
  • ¼ cup chopped cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the flatbreads.
  2. Season Chicken: In a bowl, season the diced chicken pieces evenly with smoked paprika, garlic powder, onion powder, salt, and black pepper.
  3. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 7-10 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink inside.
  4. Prepare Flatbreads: Place the flatbreads on a baking sheet. Brush each flatbread with a thin layer of BBQ sauce to add flavor and moisture.
  5. Add Toppings: Sprinkle the shredded mozzarella cheese evenly over the flatbreads. Top with thinly sliced red onion, red bell pepper, and the cooked chicken pieces to ensure every bite is loaded with delicious ingredients.
  6. Bake: Bake the flatbreads in the preheated oven for 10-13 minutes, or until the edges are golden brown, the flatbreads are crispy, and the cheese has melted into a bubbly, golden topping.
  7. Garnish and Serve: Remove the flatbreads from the oven and garnish with chopped cilantro and an optional drizzle of extra BBQ sauce. Slice and serve warm for the best taste experience.

Notes

  • Cut the Veggies Thin – Slice the red onion and bell peppers thinly so they soften and cook thoroughly during baking.
  • Dice the Chicken Small – Smaller chicken pieces make the flatbread easier to eat and ensures balanced bites.
