Ingredients

Beef and Seasoning

  • 1 pound ground beef
  • 2 tablespoons homemade taco seasoning

Cauliflower Rice

  • 16 oz. bag of riced cauliflower
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic (from the jar)
  • 1/2 packet Goya Sazón
  • 1/4 cup cilantro, chopped
  • Juice from one lime
  • Zest from 1/2 a lime

Optional Garnishes

  • Shredded cheese
  • Sour cream
  • Guacamole
  • Diced onion
  • Salsa


Instructions

  1. Cook the seasoned ground beef: In a skillet over medium heat on the stove, cook the ground beef along with the homemade taco seasoning until the beef is fully browned and cooked through. Once done, set aside for serving.
  2. Sauté garlic for cauliflower rice: In a separate skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.
