  • ⅓ cup salted dry-roasted whole cashews, chopped

  • 2 teaspoons unsweetened cocoa powder

Wet Ingredients

  • ½ cup smooth natural cashew butter
  • 3 tablespoons water
  • 1 tablespoon unrefined coconut oil
  • 1 tablespoon pure maple syrup
  • 2 teaspoons vanilla extract


Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the rolled oats, almond flour, chopped cashews, hemp seeds, mini chocolate chips, and cocoa powder. Stir thoroughly to distribute all ingredients evenly.
  2. Prepare Wet Mixture: In a small microwave-safe bowl, mix the cashew butter, water, coconut oil, maple syrup, and vanilla extract. Microwave on high for about 40 seconds until the coconut oil is fully melted. Stir the mixture until smooth and well combined.
  3. Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir everything together until the ingredients are fully incorporated and form a sticky, uniform mixture.
  4. Press into Pan: Line an 8½-by-4½-inch loaf pan with plastic wrap for easy removal. Press the mixture firmly and evenly into the pan, making sure to compact it well to help the bars hold their shape.
  5. Freeze to Set: Place the pan in the freezer uncovered and allow the mixture to firm up for about 40 minutes.
  6. Cut and Serve: Remove the pan from the freezer, lift out the block of mixture using the plastic wrap, discard the wrap, and cut into 8 bars, each approximately 1 inch wide. Serve right away or store in the freezer.
