Description

This refreshing dessert features sweet, juicy grilled peaches paired with a creamy, herb-infused peach-banana nice cream. Enhanced with fresh basil and a touch of pure maple syrup, this treat is topped with crunchy toasted pecans for added texture and flavor, perfect for a light and fruity summer sundae.

Ingredients

Fruit and Herbs

  • 4 medium fresh peaches
  • 2 medium bananas
  • 3 tablespoons chopped fresh basil

Sweeteners and Toppings

  • 2 tablespoons pure maple syrup
  • 2 tablespoons chopped toasted pecans
  • Small basil leaves (optional, for garnish)

Instructions

  1. Prepare and freeze fruit: Thinly slice two of the peaches; peel the bananas and cut them into 1-inch chunks. Place the peach slices and banana chunks in the freezer for 2 to 4 hours to firm up for blending.
  2. Grill the peaches: Cut the remaining two peaches in half and remove the pits. Place the peach halves cut side down on a grill over medium-high heat and cook uncovered for 6 to 8 minutes, or until they are tender and lightly charred, enhancing their natural sweetness.
  3. Make the basil-peach nice cream: In a food processor, combine the frozen peach slices and banana chunks with the chopped fresh basil. Cover and process until the mixture is smooth and creamy, stopping occasionally to scrape down the sides. This step may take about 5 minutes. Taste the nice cream and add 1 tablespoon of maple syrup if additional sweetness is desired; blend briefly to mix.
  4. Assemble the sundae: Place the grilled peach halves cut side up into serving bowls. Add generous scoops of the basil-peach nice cream on top. Sprinkle with chopped toasted pecans and garnish with small basil leaves if desired. Drizzle the final tablespoon of maple syrup over each sundae for added flavor.

Notes

  • For an extra smoky flavor, grill the peach halves a little longer but watch carefully to avoid burning.
  • Use ripe, juicy peaches for the best taste.
  • You can substitute toasted walnuts or almonds for pecans if preferred.
  • This dessert can be assembled ahead of time, but add the pecans just before serving to maintain their crunch.
  • For a vegan version, ensure the maple syrup is pure and unprocessed.
