These easy homemade granola bars combine porridge oats, rice crispy cereal, mixed seeds, and dried fruit bound together with a honey, butter, and brown sugar syrup. Baked to a perfect golden crunch, they make a healthy, delicious snack great for on-the-go or packed lunches.

- 160 g Porridge oats
- 20 g Rice crispy cereal
- 60 g Mixed seeds
- 90 g Dried fruit (chopped)
Wet Ingredients
- 80 g Unsalted butter
- 80 g Honey
- 80 g Light brown sugar
- 1 tsp Vanilla extract

- 1 tsp Flaky salt
Instructions
- Prepare: Preheat your oven to 150°C fan (170°C conventional, 325°F, Gas Mark 3) and line a 20x20cm cake tin with parchment paper to prevent sticking and ensure easy removal.
- Mix the dry ingredients: In a large bowl, combine the porridge oats, rice crispies, mixed seeds, and chopped dried fruit, mixing thoroughly to distribute evenly.
- Melting time: In a saucepan over low heat, melt the unsalted butter, honey, and light brown sugar together. Stir constantly until the sugar completely dissolves. Once dissolved, increase the heat slightly and let the mixture bubble gently for one minute to achieve the right consistency.
- Combine everything: Pour the hot butter and sugar mixture along with vanilla extract over the dry ingredients. Stir thoroughly to coat all the dry ingredients evenly in the syrup mixture, ensuring the granola bar mix will bind well.
- Into the tin: Transfer the mixture into the lined cake tin. Press down firmly and evenly using the back of a spoon to compact the mixture for the bars to hold together after baking. If using, sprinkle the flaky salt evenly over the top for a subtle salt contrast.
- Bake: Bake the mixture in the preheated oven for 15 minutes until golden and firm to the touch. Once baked, allow the bars to cool completely in the tin to set before slicing into 12 portions.
