Description
A refreshing and vibrant summer salad featuring juicy watermelon, crisp cucumber, fresh mint and basil, topped with tangy feta cheese and a honey-lime dressing. Perfect as a light appetizer or side dish for warm weather meals.
Ingredients
For the Dressing
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 to 2 tablespoons quality extra virgin olive oil
- Pinch of salt
For the Salad
- 1/2 watermelon, peeled and cut into cubes
- 1 English or Hot House cucumber, cubed (about 2 cupfuls)
- 15 fresh mint leaves, chopped
- 15 fresh basil leaves, chopped
- 1/2 cup crumbled feta cheese (plus more to taste)
Instructions
- Make the dressing: In a small bowl, whisk together the honey, lime juice, olive oil, and a pinch of salt until well combined. Set the dressing aside to allow the flavors to meld.
- Prepare the salad: In a large bowl or serving platter with sides, combine the cubed watermelon, cubed cucumbers, chopped mint, and chopped basil. Toss gently to mix the ingredients evenly.
- Finish and serve: Drizzle the dressing over the watermelon and cucumber mixture and toss gently once more to coat the salad evenly. Sprinkle the crumbled feta cheese on top and serve immediately for a fresh, flavorful salad.
Notes
- Use a ripe, sweet watermelon for the best flavor contrast with the salty feta.
- The dressing can be adjusted to taste by varying the amount of honey or lime juice.
- Fresh herbs like mint and basil can be substituted or combined based on preference.
- This salad is best served immediately, as the watermelon releases juice over time, which can make the salad soggy.
- For a slight kick, consider adding a pinch of chili flakes or a dash of black pepper.
