Ingredients
Filling
- 1 tbsp olive oil
- 1 small white onion, finely chopped
- 3 cloves garlic
- 8 cups fresh spinach
- A handful of fresh herbs (mint, dill, and basil)
- 1/2 cup regular or vegan feta, crumbled
- 1 cup fresh green olives, roughly chopped
- 1 tsp sea salt
- 1/2 tsp fresh cracked black pepper
- Dash of red chili flakes
Dressing & Assembly
- 1/2 cup Tzatziki Sauce
- 4 large tortilla wraps
- 2 tbsp vegan or regular butter
Instructions
- Sauté Onions: Heat olive oil in a medium-sized pan over low-medium heat for 30 seconds. Add finely chopped white onion and sauté gently for 4-5 minutes until golden, taking care not to burn them.
- Add Garlic and Spinach: Stir in minced garlic and cook for 1 minute, then add fresh spinach. Allow spinach to wilt completely and cook off excess liquid.
- Combine Filling Ingredients: Mix in the fresh herbs, crumbled feta, chopped green olives, sea salt, black pepper, and red chili flakes. Continue cooking the mixture for another 5 minutes to blend flavors and remove any remaining liquid, then remove from heat and let cool.
- Prepare Tzatziki Sauce: Get your Tzatziki sauce ready for dipping or spreading alongside the wraps.
- Prepare Wraps: Lay a large tortilla flat on your workspace and slice from the center to the edge of the wrap at one quarter to create flap sections for folding.
- Fill and Fold Wraps: Spoon the spinach mixture evenly onto each section of the wrap. Fold from the bottom left triangle up to the top left, then over to the top right triangle, and finally down to close at the bottom, forming a wrapped pocket.
- Pan Toast Wraps: Preheat a pan over low heat and melt the butter. Place each wrap seam side down and cook for 2 minutes on each side until the wrap is golden brown and crispy, watching closely to prevent burning.
