Ingredients

Vegetables

  • 2 large cucumbers (peeled and thinly sliced)
  • 1/4 cup red onion (thinly sliced)
  • 1 jalapeño (seeded and finely chopped, adjust to your spice preference)
  • 1/4 cup fresh cilantro (chopped)

Seasoning & Dressing

  • Juice of 2 limes
  • 1 tbsp olive oil
  • 1/2 tsp chili powder
  • Salt (to taste)


Instructions

  1. Prepare the Vegetables: Slice the cucumbers thinly, ideally leaving the skin on for extra crunch, and place them into a large mixing bowl. Thinly slice the red onion and chop the fresh cilantro, then add these to the bowl. If using jalapeño, remove the seeds and finely chop it before adding to the mix to control the spice level.
  2. Add Dressing and Seasoning: Squeeze the juice of two fresh limes over the vegetables, then drizzle with olive oil. Sprinkle the chili powder and salt according to your taste to enhance the flavor.
