Ingredients
Main Ingredients
- 1 1/4 cups old fashioned rolled oats (or quick oats or a half quick, half old fashioned blend)
- 2 tablespoons power mix-ins
- 1/2 cup nut butter of choice (peanut butter recommended)
- 1/3 cup sticky liquid sweetener of choice (honey or maple syrup)
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 1/2 cup mix-ins (varied options below)
Mix-In Variations
- Any nut butter with honey and 1/2 cup chocolate chips
- Peanut butter with honey, 3 tablespoons chocolate chips, 3 tablespoons chopped peanuts, 2 tablespoons raisins
- Almond or cashew butter with honey, 1/4 cup dried cranberries, 1/4 cup white chocolate chips
- Replace 1/2 cup oatmeal with 1/2 cup unsweetened coconut flakes
- Any nut butter with any sweetener, 1/2 cup mini chocolate chips, plus 2 tablespoons cocoa powder
- Almond or cashew butter with maple syrup, 1/2 cup raisins, plus 1/4 teaspoon cinnamon
Instructions
- Combine Ingredients: Place all ingredients including oats, power mix-ins, nut butter, sweetener, vanilla extract, salt, mix-ins, and any optional spices into a large mixing bowl. Stir thoroughly to combine into a uniform mixture.
- Adjust Consistency: Check the mixture’s texture. If too wet, add more oats; if too dry, add more nut butter. Aim for a sticky dough that holds together when lightly squeezed.
- Chill Mixture: Refrigerate the bowl for 30 minutes to allow the mixture to firm up, making it easier to roll into balls.
- Form Balls: Remove the mixture from the fridge. Using a cookie scoop or your hands, portion the dough into balls about 1 inch in diameter.
- Store and Serve: Enjoy immediately or transfer the energy balls into an airtight container. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months for longer preservation.
Notes
- You can customize the mix-ins to your preference for flavor and texture variation.
- If using quick oats, the texture will be softer but still delicious.
- Adjust sweetness to taste by varying the amount or type of sticky sweetener.
- Energy balls freeze well, making them ideal for meal prep and quick snacks.
- Use a cookie scoop for uniform size and easier rolling.
