Ingredients
Dip Ingredients
- 15 oz. black beans (drained and rinsed)
- 15.25 oz. whole kernel sweet corn (drained)
- 1 small red bell pepper (diced)
- 1 jalapeno pepper (minced)
- 1/3 cup fresh cilantro (finely chopped)
- ¾ cup diced red onion
- 2 avocados (diced)
Dressing Ingredients
- ¼ cup lime juice
- 2 tablespoons red wine vinegar
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 tablespoon honey
- ¼ teaspoon chili powder
Instructions
- Prepare the dressing: In a small bowl, whisk together lime juice, red wine vinegar, salt, black pepper, honey, and chili powder until well combined. Set aside to let the flavors meld.
- Mix the dip ingredients: In a large bowl, combine the drained black beans, drained sweet corn, diced red bell pepper, minced jalapeno, chopped cilantro, diced red onion, and diced avocados. Toss gently to mix evenly.
- Add the dressing: Pour the prepared dressing over the combined dip ingredients. Toss gently to evenly coat all the ingredients with the dressing.
- Serve or refrigerate: Serve the cowboy caviar immediately for best freshness, or cover and refrigerate until ready to serve, up to one day in advance.
- Freshen before serving (if stored): If made ahead, before serving, toss the cowboy caviar with an additional 1 tablespoon of lime juice. For optimal freshness, dice the avocado and add it just before serving to prevent browning.
Notes
- For extra freshness, add avocado just before serving to avoid browning.
- This recipe can be prepared a day ahead for convenience.
- Adjust jalapeno quantity to control heat level.
- Serve with tortilla chips or use as a topping for tacos or grilled meats.
- Store leftovers in an airtight container refrigerated for up to 2 days.
