Description

This Easy Cowboy Caviar recipe is a vibrant and fresh Southwestern-style dip that combines black beans, sweet corn, bell pepper, jalapeno, avocado, and a tangy-lime dressing. Perfect as a light appetizer, snack, or side dish, it’s quick to prepare in just 15 minutes and brings a zesty, colorful flair to any gathering or meal.

Ingredients

Dip Ingredients

  • 15 oz. black beans (drained and rinsed)
  • 15.25 oz. whole kernel sweet corn (drained)
  • 1 small red bell pepper (diced)
  • 1 jalapeno pepper (minced)
  • 1/3 cup fresh cilantro (finely chopped)
  • ¾ cup diced red onion
  • 2 avocados (diced)

Dressing Ingredients

  • ¼ cup lime juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon honey
  • ¼ teaspoon chili powder

Instructions

  1. Prepare the dressing: In a small bowl, whisk together lime juice, red wine vinegar, salt, black pepper, honey, and chili powder until well combined. Set aside to let the flavors meld.
  2. Mix the dip ingredients: In a large bowl, combine the drained black beans, drained sweet corn, diced red bell pepper, minced jalapeno, chopped cilantro, diced red onion, and diced avocados. Toss gently to mix evenly.
  3. Add the dressing: Pour the prepared dressing over the combined dip ingredients. Toss gently to evenly coat all the ingredients with the dressing.
  4. Serve or refrigerate: Serve the cowboy caviar immediately for best freshness, or cover and refrigerate until ready to serve, up to one day in advance.
  5. Freshen before serving (if stored): If made ahead, before serving, toss the cowboy caviar with an additional 1 tablespoon of lime juice. For optimal freshness, dice the avocado and add it just before serving to prevent browning.

Notes

  • For extra freshness, add avocado just before serving to avoid browning.
  • This recipe can be prepared a day ahead for convenience.
  • Adjust jalapeno quantity to control heat level.
  • Serve with tortilla chips or use as a topping for tacos or grilled meats.
  • Store leftovers in an airtight container refrigerated for up to 2 days.
