Description

Dr Pepper Cake is a moist and flavorful chocolate dessert made with a classic chocolate fudge cake mix enhanced by the unique fizz and flavor of Dr Pepper soda. Topped with a rich homemade chocolate frosting and optional chopped nuts, this easy-to-make cake is perfect for satisfying any sweet tooth and making celebrations extra special.

Ingredients

Cake Ingredients

  • 1 box chocolate fudge cake mix
  • 3.9 ounce small box instant chocolate pudding
  • 3 large eggs
  • ⅓ cup oil
  • 1 cup Dr Pepper soda

Frosting Ingredients

  • 1 stick (½ cup) salted butter
  • 3 Tablespoons unsweetened cocoa powder
  • 4-6 Tablespoons heavy cream (or milk)
  • 2 cups powdered sugar (confectioners sugar)
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with nonstick cooking spray to prevent the cake from sticking.
  2. Mix cake batter: In a large bowl, combine the chocolate fudge cake mix, instant chocolate pudding, eggs, oil, and Dr Pepper soda. Using an electric mixer on medium speed, beat the mixture for about 2 minutes until smooth and well combined.
  3. Bake the cake: Pour the batter evenly into the prepared pan. Bake according to the cake mix package instructions (approximately 40 minutes). The cake may have a slight dip in the center, which is normal. Check for doneness by inserting a toothpick into the center; it should come out clean.
  4. Make the frosting: While the cake is baking or cooling, melt the butter in a medium saucepan over medium-low heat. Stir in the cocoa powder and 4 tablespoons of heavy cream to combine, adding more cream as needed for desired consistency.
  5. Incorporate powdered sugar: Whisk in the powdered sugar briskly to remove lumps. Remove the pan from heat and stir in the vanilla extract for flavor.
  6. Frost the cake: Once the cake has cooled slightly but is still warm, pour the frosting over the top, spreading it evenly with a spatula. If desired, sprinkle the chopped pecans or walnuts over the frosting.
  7. Set the frosting: Allow the frosting to cool and set completely before serving to ensure a smooth, rich topping.

Notes

  • The slight dip in the cake center after baking is normal due to the soda in the batter.
  • You can substitute heavy cream with milk if needed but the frosting may be less rich.
  • Chopped nuts are optional but add a nice crunch and texture contrast.
  • Use a good-quality chocolate fudge cake mix for best flavor.
  • Make sure not to overbake to keep the cake moist and tender.
  • Allow the cake to cool slightly before frosting to prevent melting the frosting completely.
