Ingredients

Churro Dough

  • 1 cup water
  • 8 tablespoons butter
  • ¼ teaspoon salt

  • 1¼ cups all-purpose flour
  • 3 eggs

Frying & Coating

  • 1½ cups vegetable oil (or canola oil)
  • ½ cup sugar


Instructions

  1. Prepare the dough: Combine water, butter, salt, and ¼ teaspoon cinnamon in a 1½-quart saucepan over medium heat and bring to a rolling boil.
  2. Form the dough ball: Reduce heat to low, add flour, and stir vigorously until the mixture forms a ball. Remove from heat and let rest for 5 to 7 minutes.
  3. Add eggs: Add eggs one at a time, stirring well after each addition until fully incorporated. Set the dough aside.
  4. Heat oil: Using caution, heat the vegetable oil in a medium skillet or 1-quart saucepan over medium-high heat until it reaches 350˚F (177˚C).
  5. Pipe churros: Spoon the dough into a piping bag fitted with a large star tip. Pipe 1-inch strips of dough over the saucepan, cutting with a knife and dropping each strip carefully into the hot oil. Repeat until there is enough room in the pan for frying without overcrowding.
  6. Fry churros: Fry the churro bites until they turn golden brown, turning as needed for even cooking.
  7. Drain oil: Remove the churro bites using a slotted spoon or mesh spider strainer and drain them on paper towels to remove excess oil.
  8. Coat with cinnamon sugar: Mix sugar and ½ teaspoon cinnamon in a medium bowl, then toss the fried churro bites until fully coated.
