Ingredients

Cauliflower and Coating

  • 1 head cauliflower (cut into florets)
  • 1 Tablespoon cornstarch
  • 1-2 eggs
  • 1 Tablespoon water
  • 1 cup panko breadcrumbs
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C). Place oven-safe cooling racks over a baking sheet; if you don’t have cooling racks, line the baking sheet with parchment paper. Lightly grease the racks with cooking spray or olive oil to prevent sticking.
  2. Cut Cauliflower: Trim the cauliflower into bite-sized florets, shaping them into “nuggets” by trimming stems so they are easy to pick up and dip. Make sure the pieces are uniform in size to ensure even cooking.
  3. Coat with Cornstarch: Toss the cauliflower florets thoroughly in cornstarch until fully coated. Set aside to help create a crispy texture.
  4. Prepare Egg Wash: In a medium bowl, whisk together the eggs and water until smooth and combined. This will help the panko stick to the cauliflower.
