Ingredients
Cauliflower and Coating
- 1 head cauliflower (cut into florets)
- 1 Tablespoon cornstarch
- 1-2 eggs
- 1 Tablespoon water
- 1 cup panko breadcrumbs
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 1 teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper

Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C). Place oven-safe cooling racks over a baking sheet; if you don’t have cooling racks, line the baking sheet with parchment paper. Lightly grease the racks with cooking spray or olive oil to prevent sticking.
- Cut Cauliflower: Trim the cauliflower into bite-sized florets, shaping them into “nuggets” by trimming stems so they are easy to pick up and dip. Make sure the pieces are uniform in size to ensure even cooking.
- Coat with Cornstarch: Toss the cauliflower florets thoroughly in cornstarch until fully coated. Set aside to help create a crispy texture.
- Prepare Egg Wash: In a medium bowl, whisk together the eggs and water until smooth and combined. This will help the panko stick to the cauliflower.
- Mix Panko Seasoning: In a separate shallow bowl, combine the panko breadcrumbs, onion powder, garlic powder, kosher salt, and freshly ground black pepper.
- Dip Cauliflower in Egg and Panko: Using one hand to dip the cornstarch-coated cauliflower in the egg wash, making sure excess egg drips off. Then transfer to the panko mixture with your other hand, tossing to completely coat each floret evenly.
