Ingredients
Roasted Peaches
- 1 pound ripe peaches (about 3 medium), peeled and sliced into ½-inch wide wedges
- 2 tablespoons honey
- Dash sea salt
Yogurt Mixture
- 6 tablespoons honey, divided (2 tablespoons for peaches, 4 tablespoons for yogurt)
- 2 cups full fat/whole milk plain yogurt (regular or Greek)
- 1 tablespoon lemon juice (about 1 small lemon, juiced)
- ½ teaspoon vanilla extract
Instructions
- Roast Peaches: Preheat your oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper. Toss the sliced peaches gently with 2 tablespoons honey and a dash of sea salt, then spread them out in a single layer on the sheet. Roast for 30 to 40 minutes, stirring once halfway, until the peaches are soft, juicy, and caramelized around the edges.
- Prepare Yogurt Mixture: While the peaches bake, combine the yogurt, ¼ cup (4 tablespoons) honey, lemon juice, and vanilla extract in a medium bowl. Mix well and adjust sweetness by adding more honey or vanilla if desired. Chill the yogurt mixture in the refrigerator to keep it cool.
- Combine Peaches and Yogurt: Allow the roasted peaches to cool slightly. Then, scrape them and their juices into the chilled yogurt mixture. Gently fold everything together with a large spoon, being careful not to mash the peaches too much.
- Fill Popsicle Molds: Spoon the creamy peach mixture into popsicle molds. You may need to gently press the peaches down to fit everything in. Insert popsicle sticks into the molds, then freeze for at least 4 hours until fully set.
- Serve: To remove the popsicles, run warm water around the outside of the molds for about 10 seconds. Carefully pull out the popsicles and enjoy immediately for a cool, sweet treat.
