Ingredients
Tomato Topping
- 12 ounces cherry tomatoes
- 3 cloves garlic, peeled
- 2.5 tablespoons avocado oil, divided
- 2 tablespoons balsamic vinegar
- Salt & pepper, to taste
Spinach
- 3 handfuls fresh spinach
- Salt & pepper, to taste
Flatbread Base
- 1 pre-made flatbread
- 6 ounces dairy-free Boursin cheese
- 2 tablespoons fresh basil, chopped, plus more for serving
- Red pepper flakes, optional, for garnish
Instructions
- Preheat Oven and Prepare Tomatoes: Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper. Add the cherry tomatoes, whole garlic cloves, 2 tablespoons of avocado oil, balsamic vinegar, and a pinch of salt and pepper to the dish. Toss everything together to coat evenly.
- Bake Tomatoes: Place the baking dish in the oven and roast the tomatoes and garlic for 20-25 minutes until the tomatoes have burst and released their juices. Remove from the oven and roughly chop the softened garlic cloves.
- Sauté Spinach: While the tomatoes are baking, heat the remaining 0.5 tablespoon of avocado oil in a skillet over medium heat. Add the spinach along with a pinch of salt and pepper. Cook the spinach until wilted, then remove from heat and set aside.
- Assemble Flatbread: Place the flatbread on a baking sheet. Spread the dairy-free Boursin cheese evenly over the flatbread surface. Top the cheese with the roasted garlic, wilted spinach, chopped fresh basil, and burst tomatoes, reserving the tomato juices for later.
- Bake Flatbread: Return the assembled flatbread to the oven and bake for 8 minutes, or until the cheese has melted and the flatbread crust turns crispy.
- Finish and Serve: Remove the flatbread from the oven and slice. Drizzle the reserved tomato juices over the top, sprinkle with red pepper flakes if using, and garnish with additional fresh basil. Serve immediately and enjoy!
