- 1 pound green beans
- 2 tablespoons olive oil

Instructions
- Prepare Pickled Shallots: Peel and thinly slice 1 small shallot into rings. Place the shallot rings in a small bowl, add 2 tablespoons sherry vinegar and 1/4 teaspoon kosher salt. Gently scrunch the shallots with your fingers to separate the rings and allow them to marinate.
- Make Breadcrumbs: Tear the ciabatta roll or country bread slices into rough 1-inch pieces—about 1 heaping cup in total. Place them in a food processor fitted with the blade attachment and pulse until coarsely ground, ensuring no piece is larger than 1/4 inch.
- Toast Breadcrumbs: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Add the coarse breadcrumbs, stir to coat in the oil, season with 1/4 teaspoon kosher salt. Cook while stirring occasionally until the breadcrumbs are dark golden brown and toasted, approximately 6 to 8 minutes. Remove from skillet and transfer to a small bowl.
- Prepare Green Beans: Wipe out the skillet to remove any breadcrumb residue. Trim the stem ends from 1 pound of green beans. Heat the remaining 2 tablespoons of olive oil in the skillet over high heat until shimmering. Add the green beans, season with the remaining 1/2 teaspoon kosher salt, and cook, tossing occasionally with tongs until tender and browned in spots, about 7 to 9 minutes.
- Toss and Serve: Transfer the cooked green beans to a large bowl. Use a fork to add the pickled shallots (including about half of their vinegar) into the bowl with the beans. Toss gently to combine.
