This refreshing blackberry sorbet recipe is a simple and vibrant frozen dessert that captures the natural sweetness and tartness of fresh blackberries. Syrup
- 2/3 cup sugar
- 2/3 cup water
Fruit Base
- 1 lb blackberries
- 1 1/2 tbsp lime juice (or more/less to taste, can also use lemon)
Instructions
- Prepare the sugar syrup: Place the sugar and water in a small saucepan over medium heat. Warm the mixture, stirring occasionally until the sugar dissolves completely. Do not let it simmer. Remove from heat and let it cool to room temperature.
- Make the blackberry puree: Wash the blackberries thoroughly. Place them in a blender or food processor and blend until broken down well. Press the blended mixture through a fine strainer, extracting as much of the fruit pulp as possible while discarding the seeds and solids.
- Combine and chill: Mix the strained blackberry puree with the cooled sugar syrup and add the lime juice. Stir thoroughly to combine. Chill the mixture in the refrigerator for at least one hour, preferably longer or overnight for best results.
- Churn the sorbet: Following the instructions for your ice cream maker, pour the chilled blackberry mixture into the machine and churn until it reaches a soft-scoop consistency, about 20 minutes.
- Freeze to firm up: Transfer the churned sorbet into a container and freeze for at least two to three hours to firm up completely. Before serving, let the sorbet sit for a minute to soften slightly for easier scooping.
