- 2 pkg (11 oz) vanilla wafers
- 6 tablespoon butter, melted
Cheesecake Layer Ingredients
- 2 pkgs (8 oz each) cream cheese (16 oz total)
- ¾ cup sugar
- 2 cups heavy whipping cream
- 1 teaspoon vanilla extract
- 1 box (3.4 oz) banana pudding mix (Jell-O Instant Pudding & Pie Filling, Banana Cream)
- 1 ¾ cups milk
- 5 large bananas, sliced
Instructions
- Prepare the Crust: Place one box of vanilla wafers into a blender or food processor and blend until fine crumbs form. In a separate bowl, combine the vanilla wafer crumbs and melted butter, mixing thoroughly with a fork. Press this mixture evenly into the bottom of a 9×13 inch baking dish and set aside.
- Make Cheesecake Layer: In a large bowl, beat the cream cheese and sugar together until light and fluffy. Add the heavy whipping cream and vanilla extract, then continue to beat until stiff peaks form. In another mixing bowl, whisk the banana pudding mix and milk together until the mixture thickens. Fold the pudding mixture gently into the cream cheese mixture until combined.
- Assemble the Lasagna: Spread half of the cheesecake mixture over the crust in the baking dish. Layer sliced bananas evenly over the cheesecake layer, then add a layer of whole vanilla wafers. Spread the remaining cheesecake mixture over the vanilla wafers, then add another layer of sliced bananas on top.
- Add Final Topping: Crush the remaining vanilla wafers into smaller chunks and sprinkle them evenly over the final banana layer.
- Chill the Dessert: Refrigerate the assembled banana pudding lasagna for at least 2 hours, preferably overnight, to allow layers to set and flavors to meld. Before serving, optionally allow it to sit at room temperature for 10 to 15 minutes for best texture and flavor.
