Description

This 30 Minute Scoopable Chocolate Cake is a decadent, fudgy dessert that combines a slightly underbaked chocolate cake base with a rich, silky chocolate ganache topping. Perfect for chocolate lovers craving an indulgent treat, it’s quick to prepare and delivers a scoopable, luscious texture that melts in your mouth.

Ingredients

Chocolate Cake

  • 50 g granulated sugar
  • 53 g brown sugar
  • 36 g neutral oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 45 g all-purpose flour
  • 21 g Dutch process cocoa powder
  • 3/4 tsp baking powder
  • 1/4 tsp kosher salt
  • 56 g whole milk

Chocolate Ganache

  • 113 g heavy cream
  • 113 g dark chocolate, chopped
  • 14 g unsalted butter

Instructions

  1. Preheat the oven: Set your oven to 350 degrees Fahrenheit (175 degrees Celsius) and grease a small baking dish with butter to prevent sticking.
  2. Mix wet ingredients: In a medium bowl, whisk together the granulated sugar, brown sugar, neutral oil, egg, and vanilla extract until smooth and well combined.
  3. Add dry ingredients: Sift in the all-purpose flour, Dutch process cocoa powder, baking powder, and kosher salt. Mix until just combined without overmixing.
  4. Incorporate milk: Pour in the whole milk and whisk until the batter is smooth and homogeneous.
  5. Bake the cake: Pour the batter into the prepared baking dish and bake for 25 to 28 minutes. Aim for a slightly underbaked center to keep the cake scoopable and moist.
  6. Prepare the ganache: While the cake bakes, bring the heavy cream to a simmer in a small saucepan, about 190 degrees Fahrenheit. Remove from heat and add chopped dark chocolate and unsalted butter. Stir until fully melted and smooth. For extra creaminess, blend the ganache with an immersion blender.
  7. Finish and serve: When the cake comes out of the oven, immediately pour the warm ganache over the top. Serve warm and scoopable for a rich, indulgent dessert experience.

Notes

  • For best results, do not overbake the cake; it should remain slightly undercooked in the center for a scoopable texture.
  • Use good quality dark chocolate (70% cocoa or higher) for a deep chocolate flavor in the ganache.
  • If you prefer, let the ganache cool slightly before pouring to create a thicker topping, or serve immediately for a more melted effect.
  • The cake is best enjoyed warm but can be refrigerated and gently reheated before serving.
  • This recipe can be doubled for larger gatherings by using a larger baking dish and adjusting baking time accordingly.
