Ingredients

  • Cooked shrimp, peeled, deveined, and chopped
  • Avocados, diced
  • Cherry tomatoes, halved or diced
  • Red onion, finely chopped
  • Jalapeño, seeds removed and minced (optional)
  • Fresh cilantro, chopped
  • Fresh lime juice
  • Olive oil
  • Salt
  • Black pepper

Instructions

  1. Dice avocado, chop tomatoes, finely chop red onion, and mince jalapeño (if using).
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. In a large bowl, combine shrimp, avocado, tomato, red onion, jalapeño, and cilantro.
