Description

Ingredients

  • 4 cups fresh or frozen blackberries
  • 1 cup granulated sugar (divided)
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 tbsp lemon juice (optional)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine blackberries with 1/2 cup of sugar and lemon juice if using. Let sit to release juices.
  3. In another bowl, mix flour, remaining 1/2 cup sugar, baking powder, and salt.
  4. Stir in milk and melted butter to form a smooth batter. Add vanilla extract if using.
  5. Pour the batter into a greased 8×8-inch baking dish.
  6. Spoon the blackberry mixture over the batter, allowing it to naturally settle.
  7. Bake for 45–50 minutes or until the top is golden and a toothpick comes out clean from the crust.
