- 1/2 red bell pepper, finely diced
- 1/2 green bell pepper, finely diced
- 1 small onion, finely chopped
- 2 stalks celery, finely chopped
- 2 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 1–2 tsp hot sauce (adjust to taste)
- 4 oz cream cheese
- 1 cup shredded cheddar or pepper jack cheese
- 12 egg roll wrappers
- Oil for frying
- Sliced green onions (optional for garnish)
Instructions
- Sauté bell peppers, onion, celery, and garlic in a bit of oil until soft and aromatic.
- Add chopped shrimp, Cajun seasoning, and hot sauce; cook until heated through and well combined.
- Remove from heat and mix in cream cheese and shredded cheese until smooth and creamy.
- Spoon filling into the center of each egg roll wrapper, roll tightly, and seal edges with water.
- Heat oil in a skillet or fryer to 350°F; fry egg rolls in batches for 3–4 minutes until golden brown and crisp.
- Drain on paper towels and garnish with sliced green onions. Serve with dipping sauce.
Notes
- Can substitute shrimp with crab meat or mushrooms.
- Add-ins like corn, black beans, or jalapeños can enhance texture and flavor.
- Bake at 400°F for 15–20 minutes as a healthier option.
- Filling can be prepped in advance and stored in the fridge.
- To avoid sogginess, ensure filling is not too wet and drain fried rolls properly.
