Description

This Unstuffed Ground Beef Cabbage Roll Casserole is a hearty, one-pan meal that captures all the flavors of traditional cabbage rolls without the hassle of rolling. Perfect for busy weeknights, it’s comforting, satisfying, and easy to make.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 head green cabbage, chopped
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes
  • 3/4 cup uncooked white rice
  • 2 cups beef broth
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat.
  2. Add chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for another minute.
  3. Add ground beef and cook until browned and no longer pink. Season with salt and pepper.
  4. Stir in chopped cabbage, diced tomatoes, tomato sauce, and uncooked rice. Mix well to combine.
  5. Pour in beef broth, ensuring the mixture is evenly moistened. Bring to a simmer.
  6. Cover, reduce heat to low, and cook for 25-30 minutes or until rice and cabbage are tender.
  7. Remove from heat and let sit for a few minutes before serving.

Notes

  • Substitute white rice with cauliflower rice for a low-carb version.
  • Add red pepper flakes or jalapeño for extra spice.
  • Top with shredded cheese for a cheesy finish.
  • Use plant-based meat or beans for a vegetarian version.
  • Leftovers store well and reheat easily for meal prep.
