Description

This Tzatziki Chicken Salad combines creamy Greek yogurt, fresh cucumber and dill, and savory rotisserie chicken for a refreshing, protein-packed meal. Ideal for lunch, dinner, or meal prep, it’s versatile and delicious served in pitas, on crackers, or over greens.


Ingredients

  • 1 medium cucumber, finely grated
  • ¾ cup plain Greek yogurt
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cooked rotisserie chicken, shredded
  • ½ red onion, diced

Instructions

  1. Wrap the grated cucumber in a paper towel or tea towel and gently squeeze to remove excess moisture. Transfer to a mixing bowl.
  2. Add the Greek yogurt, dill, lemon juice, garlic, salt, and pepper to the bowl. Stir well to combine.
  3. Shred the rotisserie chicken into bite-sized pieces and add it to the tzatziki mixture.
  4. Toss the chicken with the sauce until evenly coated.
  5. Add the diced red onion and stir to incorporate.
  6. Serve on pita bread with sliced tomato and additional onion, or enjoy on crackers or over a bed of greens.
