This Tzatziki Chicken Salad combines creamy Greek yogurt, fresh cucumber and dill, and savory rotisserie chicken for a refreshing, protein-packed meal. Ideal for lunch, dinner, or meal prep, it’s versatile and delicious served in pitas, on crackers, or over greens.
Ingredients
- 1 medium cucumber, finely grated
- ¾ cup plain Greek yogurt
- 2 tablespoons chopped fresh dill
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cooked rotisserie chicken, shredded
- ½ red onion, diced
Instructions
- Wrap the grated cucumber in a paper towel or tea towel and gently squeeze to remove excess moisture. Transfer to a mixing bowl.
- Add the Greek yogurt, dill, lemon juice, garlic, salt, and pepper to the bowl. Stir well to combine.
- Shred the rotisserie chicken into bite-sized pieces and add it to the tzatziki mixture.
- Toss the chicken with the sauce until evenly coated.
- Add the diced red onion and stir to incorporate.
- Serve on pita bread with sliced tomato and additional onion, or enjoy on crackers or over a bed of greens.
