Description

This Turkey Zucchini Casserole is a healthy, comforting dish packed with ground turkey, fresh zucchini, and melted mozzarella cheese. It’s seasoned with Italian herbs and simmered tomatoes, then baked to bubbly, cheesy perfection. Perfect for a wholesome weeknight meal that’s both satisfying and nutritious.

Ingredients

Protein & Vegetables

  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained

Cheese

  • 1 cup shredded mozzarella cheese

Seasonings & Oils

  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil to prevent sticking.
  2. Sauté Aromatics: In a large skillet over medium heat, heat olive oil. Add chopped onions and minced garlic, sautéing for about 2 minutes until fragrant and soft.
  3. Cook Turkey: Add the ground turkey to the skillet. Cook, breaking it apart with a spoon, until well browned, about 5-6 minutes.
  4. Add Tomatoes and Seasoning: Stir in the drained diced tomatoes, dried Italian herbs, salt, and black pepper. Let the mixture simmer for 3-4 minutes to combine the flavors.
  5. Layer the Casserole: In the prepared baking dish, layer half of the sliced zucchini. Top with half of the turkey mixture, then sprinkle half of the shredded mozzarella cheese. Repeat the layers with the remaining zucchini, turkey mixture, and mozzarella.
  6. Bake: Bake the assembled casserole uncovered for 30-35 minutes until bubbly and the cheese is golden brown.
  7. Serve: Allow the casserole to cool for 5 minutes before serving to let it set and for safer consumption.

Notes

  • Draining the canned diced tomatoes prevents excess moisture, keeping the casserole from becoming watery.
  • Slicing the zucchini evenly helps ensure even cooking in the oven.
  • You can substitute ground turkey with ground chicken or lean ground beef if desired.
  • This casserole can be prepared in advance, assembled the night before, and baked fresh before serving.
  • For extra flavor, sprinkle with fresh basil or parsley before serving.
