Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 2 tbsp olive oil or butter
  • 1 large yellow onion, thinly sliced
  • 8 oz mushrooms, sliced (white button or cremini)
  • 1 cup Monterey Jack cheese, shredded or sliced
  • 1/4 cup chicken broth (optional)
  • 1 tbsp fresh parsley, chopped (optional for garnish)

Instructions

  1. Season the chicken breasts on both sides with salt, pepper, garlic powder, and paprika.
  2. Heat 1 tbsp olive oil or butter in a large skillet over medium heat. Sear the chicken until golden brown and cooked through (about 5-7 minutes per side). Remove and set aside.
  3. Add remaining oil or butter to the skillet if needed. Sauté the onions until softened, about 5 minutes.
  4. Add mushrooms and continue to cook until tender and caramelized, about 7-8 minutes. Add chicken broth if the pan becomes too dry.
  5. Return the chicken to the skillet, spoon the mushrooms and onions over the top.
  6. Top each chicken breast with Monterey Jack cheese. Cover and cook on low until the cheese melts and everything is heated through, about 5 minutes.
  7. Garnish with chopped parsley and serve hot.
