Description

Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 cup long-grain white rice
  • 1 cup BBQ sauce (honey or smoky style)
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 cups chicken broth (or water)
  • Salt and pepper to taste
  • Optional: 1 tbsp honey or hot sauce for extra sweetness or heat

Instructions

  1. Season diced chicken with salt and pepper, then heat olive oil in a large skillet over medium-high heat.
  2. Sear the chicken until golden brown, about 5–7 minutes, then remove it from the pan.
  3. In the same skillet, sauté the onion for 2–3 minutes, then add garlic and cook another minute.
  4. Stir in the rice and let it toast for about a minute.
  5. Pour in chicken broth, scrape up any brown bits, then stir in the BBQ sauce.
  6. Return the chicken to the pan, reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
  7. Fluff the rice and let the dish rest off heat for 5 minutes before serving.
