Ingredients
- 1 cup oat flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 4 tablespoons coconut sugar or brown sugar
- 4 tablespoons white sugar or additional coconut sugar
- ⅓ cup chocolate chips (or more if desired)
- ⅓ cup chopped nuts (optional)
- 1 teaspoon pure vanilla extract
- 2 tablespoons vegetable oil or melted coconut oil
- 3–5 tablespoons milk of choice, as needed
Instructions
- Preheat oven to 380°F (193°C).
- In a mixing bowl, combine oat flour, baking soda, salt, sugars, and chocolate chips.
- Stir in vanilla, oil, and 3 tablespoons milk. Add more milk if dough is too dry.
- Form into one large dough ball, then divide into smaller balls.
- Optional: Chill for softer cookies.
- Place on a baking tray and bake for 9 minutes.
- Let cookies cool on tray for 10–15 minutes to firm up.

- For nut-free cookies, omit nuts and use nut-free milk/oil.
- For vegan version, ensure chocolate chips and milk are plant-based.
- Homemade oat flour: Blend rolled oats until fine and packed tightly when measuring.
