Description

Ingredients

  • 4 cups frozen tater tots
  • 1/2 pound ground breakfast sausage
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk (whole or 2%)
  • Salt and pepper, to taste
  • 1/2 cup shredded cheddar cheese (or preferred cheese)
  • 23 large eggs
  • 1 tablespoon butter or cooking oil

Instructions

  1. Arrange frozen tater tots in a single layer on a baking sheet and bake according to package instructions until golden and crispy.
  2. In a skillet over medium heat, brown the sausage until fully cooked. Sprinkle flour over the sausage and stir for a minute to cook the flour.
  3. Slowly whisk in milk until a smooth sauce forms. Season with salt and pepper and simmer until thickened.
