Ingredients
- 4 cups frozen tater tots
- 1/2 pound ground breakfast sausage
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk (whole or 2%)
- Salt and pepper, to taste
- 1/2 cup shredded cheddar cheese (or preferred cheese)
- 2–3 large eggs
- 1 tablespoon butter or cooking oil
Instructions
- Arrange frozen tater tots in a single layer on a baking sheet and bake according to package instructions until golden and crispy.
- In a skillet over medium heat, brown the sausage until fully cooked. Sprinkle flour over the sausage and stir for a minute to cook the flour.
- Slowly whisk in milk until a smooth sauce forms. Season with salt and pepper and simmer until thickened.
- In a separate pan, melt butter or heat oil over medium-low heat and fry the eggs sunny-side up (or to your liking), seasoning lightly with salt and pepper.
- Divide hot tater tots into bowls, spoon sausage gravy over them, sprinkle with shredded cheese, and top with the fried egg. Serve immediately.
