Description

A Sweet & Tangy Green Tomato Relish made with unripe green tomatoes, sugar, vinegar, and spices, perfect for pairing with grilled meats, sandwiches, or as a side dish.


Ingredients

  • 4 cups chopped green tomatoes
  • 1 large onion, finely chopped
  • 1 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 2 teaspoons mustard seeds
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red bell pepper, finely chopped (optional)

Instructions

  1. In a large saucepan, combine the chopped green tomatoes, onion, and red bell pepper (if using).
  2. Add the sugar, apple cider vinegar, water, mustard seeds, cinnamon, cloves, turmeric, salt, and black pepper to the pan. Stir well to combine.
  3. Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent sticking.
  4. Once it begins to boil, reduce the heat and simmer for 45 minutes to 1 hour, stirring occasionally, until the relish thickens and the tomatoes break down.
  5. Once the relish has thickened, remove from heat. Let it cool slightly before transferring it to sterilized jars.
  6. Seal the jars and store them in a cool, dark place. For longer storage, process the jars in a hot water bath for 10 minutes to ensure proper sealing.

Notes

  • For a spicy relish, add chopped jalapeños.
  • For an herbal twist, try adding fresh thyme or rosemary.
  • For a smoky flavor, add smoked paprika.
  • If you prefer a sweeter relish, increase the sugar to taste.
  • Once opened, store the relish in the fridge for 2-3 weeks.
