Description
A Sweet & Tangy Green Tomato Relish made with unripe green tomatoes, sugar, vinegar, and spices, perfect for pairing with grilled meats, sandwiches, or as a side dish.
Ingredients
- 4 cups chopped green tomatoes
- 1 large onion, finely chopped
- 1 cup sugar
- 1/2 cup apple cider vinegar
- 1/2 cup water
- 2 teaspoons mustard seeds
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 red bell pepper, finely chopped (optional)
Instructions
- In a large saucepan, combine the chopped green tomatoes, onion, and red bell pepper (if using).
- Add the sugar, apple cider vinegar, water, mustard seeds, cinnamon, cloves, turmeric, salt, and black pepper to the pan. Stir well to combine.
- Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent sticking.
- Once it begins to boil, reduce the heat and simmer for 45 minutes to 1 hour, stirring occasionally, until the relish thickens and the tomatoes break down.
- Once the relish has thickened, remove from heat. Let it cool slightly before transferring it to sterilized jars.
- Seal the jars and store them in a cool, dark place. For longer storage, process the jars in a hot water bath for 10 minutes to ensure proper sealing.
Notes
- For a spicy relish, add chopped jalapeños.
- For an herbal twist, try adding fresh thyme or rosemary.
- For a smoky flavor, add smoked paprika.
- If you prefer a sweeter relish, increase the sugar to taste.
- Once opened, store the relish in the fridge for 2-3 weeks.
