Instructions
- Preheat oven and prepare pan: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup, or lightly grease the pan to prevent the sweet potatoes from sticking.
- Slice and dry the sweet potatoes: Peel the sweet potatoes if needed, then slice them into ½-inch thick rounds, aiming for even thickness. Pat the slices dry using a clean kitchen towel to remove excess moisture, which helps them roast instead of steam.
- Season the sweet potato rounds: In a large bowl, toss the sweet potato slices with olive oil, salt, black pepper, and garlic powder. Ensure each slice is evenly coated so they crisp up on the edges while remaining tender inside.
