Sweet Blueberry Biscuits are soft, buttery, and packed with juicy blueberries in every bite. These easy homemade biscuits are perfect for breakfast, brunch, or dessert and are topped with a simple vanilla glaze for extra sweetness.
Ingredients
- For the biscuits:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 3 tbsp granulated sugar
- 1/2 cup unsalted butter, cold and grated
- 3/4 cup buttermilk
- 1 cup fresh blueberries (tossed with a little flour)
- For the glaze (optional):
- 1 cup powdered sugar
- 2 tbsp melted butter
- 1–2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss blueberries with a little flour to prevent sinking in the dough.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- Grate in cold butter and mix until crumbly.
- Add buttermilk and stir until dough forms. Gently fold in blueberries.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
- Bake for 15–18 minutes, until golden brown.
- While baking, make the glaze by whisking together powdered sugar, melted butter, milk, and vanilla.
- Let biscuits cool slightly, then drizzle glaze over the top.
Notes
- Add lemon zest to the dough or glaze for a citrusy touch.
- Frozen blueberries work well—use them straight from the freezer.
- For richer biscuits, replace some buttermilk with heavy cream.
